Citric acid monohydrate (E330)
Citric acid is a multi-purpose organic acid: it can be used for the mash pH adjustments, when his citric flavor is desirable to enhance fruity notes (like for example in blanche beers). It can be also used for pH correction in the hard seltzer production.
In the cleaning procedures for homebrewers, it can be used as an acid rinse for the removal of inorganic residues (at 3-4% concentration) or for stainless steel passivation.
For mash acidification, keep in mind that 1 ml of lactic acid (80%) corresponds to about 1,13 g of citric acid monohydrate.
