Microgranulated pectolytic enzyme, concentrated and purified, specific for the clarification of wort/beer containing pectin. The high concentration of pectolytic activities (polygalacturonase, pectinesterase, and pectin lyase) and hemicellulase secondary activities allow for the rapid hydrolysis of variously composed pectins, facilitating clarification and compacting of the molecules causing haze, increasing the yield of clear wort, even in conditions of low temperature and low pH.
