Malt is the basic ingredient of beer. It is obtained by malting (partial starch degradation) of the cereal. The numerous existing varieties differ from the area of origin and the type of malting. Each type of malt has unique characteristics of color and flavor (sweet, biscuity, caramelised, smoked), which are decisive in the characterization of the beer produced.
